- 1 Can Kidney beans, drained
- 1 Cucumber, slices
- 1-2 Tomatoes, diced
- 1 Can Artichoke hearts (water-packed), drained & sliced
- 1/3 C Lemon juice
- 2 Tbsp Olive oil (or less)
- Salt to taste
- Herbs to taste - basil, oregano, garlic, etc.
